Ingredients

1 large egg, scrambled

1 item light whole wheat english muffin

4 slices fresh tomatoes

1/4 cup shredded part-skim mozzarella cheese

1 Tbsp basil

Directions

Divide egg between open-face muffin; top each half with 2 tomato slices and 2 tbsp cheese. Broil until cheese starts to brown; garnish with basil.
